Shrimp Scampi with Squash Noodles

Sauté spinach with coconut oil, granulated garlic and onion, salt and italian seasoning. Toss the spinach with the yellow squash. Season to taste. For shrimp: Pat shrimp dry and sauté in a very hot pan with coconut oil. Season with salt. When the shrimp are almost cooked, add in the garlic, lemon juice and lemon zest. Once they are cooked, toss the shrimp with the fresh herbs. Season to taste.  Package with squash on the bottom and shrimp on top. Garnish with a lemon wedge.

Package in a 2 cup container.
