Shredded Chicken Enchiladas
Combine shredded chicken with sautéed spinach, granulated garlic and salt. Make a simple sauce with tomato sauce, jalapeno, yellow onion and chili powder. Simmer on the stove for 20 minutes and then layer, like a casserole, tortillas, chicken and spinach, cheese and sauce. The top layer should be tortilla sauce and cheese. Bake uncovered at 300 degrees for 30 minutes until cooked through and golden brown.
