Shitake Turkey Egg Drop Soup
Sauté fresh ginger, sliced shitakes and ground turkey in a soup pot until turkey is broken apart well and mostly cooked through. Then add in chicken stock, coconut aminos, salt, pepper, and bring to a simmer. Turn off heat, then immediately add the whisked egg through the edge of a fork or slotted spoon, stirring slowly to create the “egg drop.” Then add in the cauli rice, spinach, green onions, sesame oil, and cherry tomatoes. Season to taste.
