Lamb Gyro Meatballs with Spiced Rice
Sauté granulated onion with frozen spinach and season well with gyro seasoning and salt. Then combine vegetable mix with ground lamb and make one tiny sample to taste. Form into 4 uniform meatballs per serving. Make spiced rice by sautéing granulated onion and garlic in coconut oil and seasoning with a little cumin, cinnamon and salt. Then add in 1 bag of cauliflower rice per 2 servings. Once the rice is cooked, fold in some chopped chives.
