Green Chili and Spinach Stuffed Pork Burger with Plantains
Sauté frozen spinach and season with garlic, onion, salt and smoked paprika. Add the sautéed spinach and the green chile salsa to the raw ground pork and add a little additional salt. Make one tiny sample patty to test seasoning. Divide pork and veggie mix into 2 patties per serving and bake at 350 degrees for 10 minutes. Dice plantains, toss in coconut oil and salt. and roast at 400 degrees for 10 minutes. Platter plantains on the bottom topped with pork burgers and garnish with chives.
