Curry Beet and Sweet Potato Hash with Mango Chutney

Wash veggies. Combine sweet potatoes and beets with oil, curry, garlic and salt. Roast at 400 for 15-20 minutes. Then fold in kale and roast for another 5 minutes.

To make the chutney, sauté mango, onion, spices and vinegar until slightly soft. Package with chutney on top.

Package in a 2 cup container.
