Coconut Red Curry Vegetables
In a large saute pan, saute sweet potatoes in coconut oil until slightly cooked. Add in broccoli, bell peppers, and onions and cook until onions are almost translucent. Add in the coconut milk, red curry paste, lime juice and zest, and salt. Cook until all veggies are tender and sauce is thickened.
Package in a 2 cup container.
